I love baking. I love making my own recipes and try new things. I love to go shopping for ingredients, I love the preparing, and to be honest, I really like to do the dishes afterwards as well. And of course; I love love love to taste the cake, cookies, cupcake or whatever other thing it is.
I find it peaceful and fun to bake, I know it can feel quite stressful at times, but if you make sure you’ve got the time, and read through the recipe one extra time, I promise you that the stress won’t come and disturb you or your baking. Also, I think that if you take a step away from the thought of that the thing you’re baking must be perfect, you’ll find a bigger joy in the process of baking it.
Now; I’ve wanted to bake something new for a long time, I just haven’t got myself to actually do it. But now it’s done, Christmas is over and the longing for the summer has begun (for me anyways, am I alone on that?), therefor I decided to at least make it taste like summer with some berries in the cake. I made a classic sponge cake with nutella, strawberries, blueberries and a nutella & coconut sauce. This is how it turned out:

Too make this you will need:
Two bowls
A baking tin
A wooden spoon or electric whisk depending on how strong and patient you're feeling
A spatula
200 g of butter (room temperature)
2,5 dl caster sugar
3 eggs
4 dl flour
1 tsp. baking powder
2 tsp. vanilla sugar or the zest of one lemon
Berries of your choice
Nutella
Coconut oil

1 tsp. baking powder
2 tsp. vanilla sugar or the zest of one lemon
Berries of your choice
Nutella
Coconut oil
Start with preheating the oven, temperature: 150-175°c. Stir the butter and sugar until it’s frothy. It may take a while if you do it with a wooden spoon, and you'll most certainly feel it in your arms after, but with the electric whisk there is a risk of splashing your kitchen (I tried). Then add one egg at the time. Mix the flour, baking powder and vanilla sugar/lemon zest in a clean bowl and then add this in to the egg mixture and stir well.
Now put about 2/3 of the batter in to a buttered baking tin. Lay some nutella on top of the batter. I used about 2 tbsp. and I microwaved it for 30 seconds to make it more fluid and easier to work with.
Now arrange the berries the way you want them. You can make a pattern like stripes or like I did, or you can sprinkle the berries all over the cake, you won't be able to see is when it's done, but I think it's nice to know that it is there.
Also; if you're using frozen berries, like I did, I suggest you let them drain off for a while.

Put the rest of the batter in the tin and try to make it cover the berries. Bake in the lower part of the oven for 60 minutes.
Too make the nutella & coconut sauce you take about 2/3 nutella and 1/3 coconut oil, put it in the microwave for a couple of seconds and stir. Easy as that. You can either pour the sauce on each piece as you eat, or you can pour the sauce on the whole cake before it's served.

Let me know if you make this cake yourself, and how tasty it is on a scale of 1-10! I would say it's a strong 8.
